This White Chocolate Peanut Butter Cup Biscotti is perfect with a cup of coffee or milk! A beautiful gift idea for Christmas that’s surprisingly easy to make!

My kids and I have developed a great fondness for biscotti. We tend to prefer soft, chewy cookies in general, but there is something truly scrumptious about crunchy, delicious biscotti dipped in hot chocolate, coffee, or milk. SO GOOD!

Biscotti make such great gifts for Christmas. You can dress them up so easily with drizzles of chocolate and sprinkles. You could even chop up some peanut butter cups nice and small and sprinkle those on top of the drizzled chocolate. Mmmmm.

Place a few biscotti in a festive mug, wrap in cellophane and tie with a ribbon. Tuck in a gift card for a favorite coffee shop, or a few k-cups or packets of hot chocolate for a gift anyone would be happy to receive!

White Chocolate Peanut Butter Cup Biscotti
Ingredients
Biscotti
- 1/2 cup unsalted butter softened
- 1/2 cup creamy peanut butter
- 1 1/4 cup granulated sugar
- 2 eggs
- 1/2 tsp salt
- 1 tsp baking soda
- 2 1/4 cup flour
- 1 1/2 cup chopped peanut butter cups I used a mix of milk and white chocolate
Topping
- 4 oz white chocolate melted
- sprinkles if desired
Instructions
Biscotti
- Preheat oven to 350
- In a large mixing bowl cream the butter, peanut butter, and sugar.
- Mix in the eggs until well combined.
- Add salt and baking soda and mix well.
- Add flour and mix until combined.
- Stir in peanut butter cups.
- Form dough into a 2 loaves about 10x3" and bake on a silicone baking mat or parchment cookie sheet for 30 minutes.
- Slice the loaves into 3/4-1" slices and bake for 5 more minutes with the cut side down. Flip the cookies and bake 5-7 more minutes or until crisp.Let cool.
- Flip the cookies and bake 5-7 more minutes or until crisp.Allow to cool.
Topping
- Drizzle the the top of each biscotti with the melted white chocolate. Immediately add sprinkles, if desired. Allow to set up before storing in a sealed container or freezing.
