Easy Gingerbread Biscotti Recipe

This Easy Gingerbread Biscotti Recipe is perfectly spiced, with a sweet white chocolate drizzle. Excellent with coffee, and great for gifting!

If you have never made biscotti because you think it’s too difficult, let me assure you, it’s not hard at all! If you can make cookies, you can absolutely make biscotti! You don’t even have to bother with scooping dough balls like traditional cookies!

Biscotti are essentially cookies shaped into logs that are then baked, sliced, and baked again. This produces a crisp cookie perfect for dunking in coffee or milk!

My kids and I are obsessed! (This Chocolate Peppermint Biscotti is another must-make this Christmas! My kids beg to make these all the time!)

Have you started baking Christmas cookies yet this year? Sometime in October I got the itch to start, and I haven’t looked back! Usually we wait until the day after Thanksgiving, but this year is…special, so we got a jump start on the holiday cheer!

How to Make Gingerbread Biscotti:

  • Start by creaming together butter and sugar until it’s really pale and fluffy.
  • Add molasses, ginger, cloves, cinnamon, and nutmeg for that classic gingerbread flavor!
  • When the dough is ready to bake, divide it in two sections. Make two logs and shape them about 12×4″ and about 1/2″ thick.
  • Bake them on parchment paper or a silicone baking mat on the cookie sheet.
  • After the first bake, let the biscotti cool about 5 minutes – just enough to be able to handle it without it breaking.
  • Carefully slice with a sharp serrated knife, making each section about 3/4″ wide.
  • Gently flip the biscotti so the cut side is on the cookie sheet and bake a second time.
  • Flip and bake them one last time until nice and crisp!

Ingredients
  

  • 1/3 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • 1 TBS ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 2 1/2 cup all purpose flour
  • 6 oz white chocolate melted

Instructions
 

  • Preheat oven to 350
  • In a large mixing bowl cream together the butter and sugar until light and fluffy.
  • Add eggs, molasses, vanilla, spices, and salt and mix well.
  • Mix in baking soda and flour just until combined.
  • Divide dough in two, and form each one into a log about 12x4" and place on a parchment lined baking sheet. Press down until logs are about 1/2" thick.
  • Bake for 25 minutes, then remove from oven and allow to cool about 5 minutes.
  • With a sharp serrated knife, slice logs into 3/4" slices and place cut side down on the baking sheet. Bake 8 minutes then flip each biscotti and bake 8 more minutes.
  • Once the biscotti are completely cooled, drizzle with melted white chocolate. Add sprinkles if desired.
    Allow the chocolate to harden before storing in a tightly sealed container.
