Lemon Coconut Granola Bars

Lemon Coconut Granola Bars
Serves 24
Prep time 15 minutes
Cook time 20 minutes
Total time 35 minutes
These easy homemade Lemon Coconut Granola Bars are a fun snack that everyone will love! They are chewy with a bit of crunch, and the flavors are so bright!

Ingredients

  • 4 tablespoons unsalted butter
  • 1/2 cup honey
  • 1/3 cup brown sugar
  • 1/3 cup lemon Juice
  • 1 cup coconut
  • 1 1/2 cup old fashioned oats
  • 1 1/2 cup crisp rice cereal
  • zest of one lemon

Directions

Step 1
Preheat oven to 350
In a saucepan over medium low heat, melt the butter with the honey and sugar, and continue stirring until all sugar is dissolved. Remove from heat and stir in lemon juice, coconut, oats, and cereal until evenly coated. Press firmly into a 9x13" pan, lined with foil and greased. Bake 18-20 minutes. Sprinkle with the zest of a lemon. Allow to cool before lifting bars from pan and cutting into 24 pieces. Store in a sealed container.

    1. I am with you on the lemon. I did a whole week of “lemon in everything” on my blog recently, too. I can’t get enough of it in sweet AND savory dishes! 2. My husband and I are not fans of coconut. Any suggestions on a substitute for this particular recipe? Looking forward to giving it a try!

      Oh, I will have to check out your lemon recipes! You can just leave out the coconut or swap in some white chocolate chips or dried fruit!
