Lemon Coconut Granola Bars

These easy homemade Lemon Coconut Granola Bars are a fun snack that everyone will love! They are chewy with a bit of crunch, and the flavors are so bright!
Ingredients
- 4 tablespoons unsalted butter
- 1/2 cup honey
- 1/3 cup brown sugar
- 1/3 cup lemon Juice
- 1 cup coconut
- 1 1/2 cup old fashioned oats
- 1 1/2 cup crisp rice cereal
- zest of one lemon
Directions

Preheat oven to 350 In a saucepan over medium low heat, melt the butter with the honey and sugar, and continue stirring until all sugar is dissolved. Remove from heat and stir in lemon juice, coconut, oats, and cereal until evenly coated. Press firmly into a 9x13" pan, lined with foil and greased. Bake 18-20 minutes. Sprinkle with the zest of a lemon. Allow to cool before lifting bars from pan and cutting into 24 pieces. Store in a sealed container. |
