Triple Berry Coffee Cake

Triple Berry Coffee Cake

Ingredients

Cake

  • 1/2 cup unsalted butter (softened)
  • 1/4 cup oil
  • 1 1/2 cup granulated sugar
  • 3 eggs (beaten)
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 1/4 cups all purpose flour
  • 1/2 cup plain Greek yogurt
  • 3/4 cups buttermilk
  • 1 cup blueberries (I used frozen)
  • 1 cup raspberries (I used frozen)
  • 1 cup strawberries (I used frozen)

Topping

  • 3/4 cups brown sugar
  • 1/3 cup oats
  • 3 tablespoons oil

Glaze

  • 3/4 cups powdered sugar
  • 1/2 teaspoon almond extract
  • 1-2 teaspoon water

Directions

Cake
Step 1
In a large mixing bowl, cream the butter, oil, and sugar. Add the beaten eggs and mix very well. Mix in almond extract, vanilla, and salt. Add baking soda, baking powder, and half of the flour mixing until well combined. Mix in the yogurt and buttermilk. Mix in remaining flour just until combined. Stir in berries.
Pour into greased 9x13" pan. Set aside.
Topping
Step 2
In a small bowl stir together topping ingredients until the oil has coated everything. Sprinkle evenly over the cake batter.
Bake at 350* for 45 minutes or until a tester inserted into the center of the cake comes out clean.
Glaze
Step 3
In a small bowl whisk together the glaze ingredients until it has the texture of glue. Add more water if too thick.
Drizzle over cooled cake or individual slices.

    This coffee cake looks scrumptious! I need to make it, or at least a blueberry version of it. I love berries and my husband is a blueberry fiend. We hoard blueberries in the summer when they are on sale. At the moment, there are 8 pints of them in my fridge. 🙂

    Amen, sister! I’m totally with you on the fact that coffee cakes must be moist and topped with crunchy streusel. I mean, who are these crazy people who like dry, naked coffee cakes? (Aside from the looney bin, that is, which is where they clearly belong for their dead wrong opinions on cake.) 🙂
    Love the triple-berry filling you’ve used for this recipe. It looks like the perfect dessert to finish off a summertime meal… preferably with a scoop of ice cream, obvs.

    You had me at “berries”. I love anything with summer berries, and find any excuse to try them in new ways. I just added fresh blackberries to a vanilla cupcake recipe yesterday, and SO delicious. This recipe looks like a stunner–I have to try it!!

    This looks delicious! I love berries in the summertime, and i think the addition in a coffee cake makes a great afternoon snack with coffee or tea, OR a wonderful sweet treat for breakfast!
