You guys, I cannot stress enough how important it is that you make this Red Velvet Coffee Cake as soon as possible. Even if you don’t like red velvet cake. Even if you don’t like coffee cake. I will give you a money back guarantee that you will love this cake!

Red Velvet Coffee Cake for Valentine's Day

So a couple days ago I had the brilliant idea for this cake. I have told you before that I am not a big “cutesy” food person, but this cake is pretty and red, and that makes it perfect for Valentine’s Day (or Christmas) without having to make it in the shape of a cupid…or a heart. It looks festive as is!

I decided to google Red Velvet Coffee Cake to see if it is something that has already been done a hundred million times. I was giddy when I could not find a single Red Velvet Coffee Cake recipe!! I searched high and low and kept coming up with nothing.

I told my hubby I was going to make the very first Red Velvet Coffee Cake, and it was going to be awesome.

So I did. And it is!!!  (see this photo on Instagram to see proof of the deliciousness) My hubby told me I can now add “inventor” to my resume. Haha!  Who wouldn’t want to hire the inventor of Red Velvet Coffee Cake?!

Red Velvet Coffee Cake

You just have to trust me on this one. Make this cake!! You will be so happy you did. It has the perfect texture – light and moist, and the flavor is spot on. The mini chocolate chips scattered throughout kick it up a notch in the chocolate department. Always a good thing. And don’t even get me started on the crunchy topping.

Red Velvet Coffee Cake with Chocolate Chip Streusel Topping

Red Velvet Coffee Cake

Ingredients
  

Cake

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 tbsp cocoa powder
  • 1/2 tsp salt
  • 1 tbsp vinegar
  • 1/3 cup sour cream
  • 1/2 cup milk
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 cup flour
  • 1 1/2 tbsp red food color
  • 1/2 cup mini chocolate chips

Topping

  • 1/2 cup brown sugar
  • 1 tbsp cocoa powder
  • 2 tbsp oil
  • 1/3 cup mini chocolate chips

Instructions
 

Cake

  • Preheat oven to 350
  • In a large mixing bowl, cream the butter and sugar.
  • Add the beaten eggs and mix very well.
  • Mix in vanilla, cocoa, salt, and vinegar.
  • Add baking soda, baking powder, and half of the flour mixing until well combined.
  • Mix in the sour cream and milk.
  • Mix in remaining flour just until combined.
  • Add food coloring and mix until batter is evenly colored.
  • Stir in chocolate chips.
  • Pour into greased 8" square baking pan. Set aside.

Topping

  • In a small bowl stir together topping ingredients until the oil has coated everything. Sprinkle evenly over the cake batter.
    Bake for 30 minutes or until tester inserted into the center of the cake comes out clean.

        You could certainly use buttermilk if you wanted to! The vinegar helps the red pop more and I feel like most people have it on hand vs buttermilk 🙂
