Who doesn’t love a creamy, cheesy pasta, especially on cold nights?

This comforting, easy meal is a snap to whip up, and is sure to be a crowd pleaser! Even picky kids love this pasta!

So, I have been MIA around here for a few weeks. I didn’t mean to leave you hanging for so long, but we had a rough couple weeks in our house.

The last day of school before Christmas break, I went to my daughter’s 3rd grade Christmas party, and helped out at my twin’s kindergarten Christmas party.

I took them home a little bit early, just after the parties ended, and we were all filled with excitement for all that Christmas break would hold for us.

Christmas time is so magical and fun when you’re little, and it sort of feels that way all over again watching your own kids have that experience. We watched Christmas movies that night and ate too many cookies, and went to bed looking forward to a fun filled break.

Three Cheese Pasta with Kielbasa and Peppers

We woke up to two very sick children and over the next few days, all five of our babies were sick. Two of them had influenza and basically cried for a week straight. The others had fevers and sickness, but not quite as severe. Don’t worry, my husband and I got sick too. Yay!

All of our plans were cancelled. They were sick on Christmas.  One of my sons has a birthday on New Year’s Day, and he was sick then too! Basically the entire 2 weeks they were on break (and my husband’s week of vacation from work) were plagued with sickness. Such a bummer.

That’s sure not how we wanted to spend our holidays, but we were together, and thankfully, everyone is better now!

Other than a big pot of chicken noodle soup, I didn’t really cook during that time. No one was eating, so there was no point. Once the sickness left our house, I was glad to get back in our newly remodeled kitchen, and bake and cook all the things.

This was one of the first things I made and it was so good! My hubby added some cayenne and cajun seasonings to make it spicy, but for the kids’ sake, I left the spices out of the rest.

This is total comfort food, and super simple to make. Definitely add this to your weeknight dinner menu – all you need is 30 minutes! Enjoy!

    I made this 3 cheese pasta with kielbasa and peppers last night. It was SO good! Makes a lot, so good to feed a crowd or a couple for a few days. Anyway, did not disappoint. Thanks for the great recipe!
