These White Chocolate Macadamia Nut Cookies are making me all nostalgic about our trips to Hawaii over the years. And while I can’t be there right now (I wish!) I can eat these chewy, butter cookies on my front porch and dream.
These cookies are super easy to make, and they are seriously addicting. Like, be prepared to lose all self control and watch the batch disappear right before your eyes. I recommend sharing, or freezing some cookies to keep your jeans happy.
A few of these cookies with a hot cup of coffee is pretty much the perfect afternoon treat! Even my kids said these were the best cookies ever. They were a little upset that my husband felt the same way… Oops!
The saltiness from the nuts, along with the chewy buttery cookie, and sweet white chocolate chips is almost as dreamy as a Hawaiian vacation. I know it’s just the end of summer, but I’m already planning to make these for my Christmas cookie trays/gifts! Don’t hate me for bringing up Christmas this early…I just can’t help myself. Enjoy!

The BEST Chewy White Chocolate Macadamia Nut Cookies
Ingredients
- 1 cup unsalted butter softened
- 1 cup brown sugar
- 2/3 cups granulated sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 1/2 teaspoon salt
- 1 tablespoon corn starch
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 1/2 cups all purpose flour
- 1 1/2 cup white chocolate chips
- 1 1/2 cup macadamia nuts I roughly chopped some and left some whole
Instructions
- Preheat oven to 325
- In a large mixing bowl cream together the butter and sugars very well.
- Add vanilla, eggs, and salt, and mix well.
- Add corn starch, baking soda, baking powder, and flour, and mix until combined.
- Stir in chips and nuts.
- Drop by 2TBS onto an ungreased baking sheet (I use a silicone baking mat) 2" apart. Bake for 10-11 minutes or until golden on the edges.
- Allow to cool a few minutes on the baking sheet before transferring to a cooling rack to cool completely. Store in an air tight container.

I use fleischmans margarine instead of butter and King Arthur flour. Double acting no is gluten free and so is cornstarch. Add 1/4 cup less flour at first. If the dough is too wet add the other 1/4 cup! (Gluten free flour tends to soak up extra moisture)

This recipe doesn’t not require the dough to be chilled. If you like a thicker cookie, or you just want to make the dough in advance, feel free to chill 🙂

Well this recipe is amazing in my opinion fool proof I have only made cookies two times and these are the best ones, I could have had them in for a shorter period of time but other then that you can not really go wrong.🙌🏻

Thank you so much for the recipe! I made these last night. I altered the macadamia nut with sliced almonds and 1 tsp of almond extract and 1 tsp of vanilla extract. They are perfect! Brought them to share at work, they were a hit!

I’ve made these cookies three time now. The first time, I think I forgot to add 1/2 tsp of baking soda, so they came our flat. The second time they were perfect, and then they were a bit flat again the last time, but I know the last time all of my measurements were right. Any ideas as to why they made have turned out thin?

Your dough may have needed longer fridge time. Or if the dough was especially sticky, you may have needed a bit extra flour. When there is more moisture in the air, or if the dough gets warm, extra flour will keep them from getting flat 🙂

Maybe your baking soda was old, you can test it b4 using by putting some in a cup & a drop of vinegar; if it bubbles it’s still good!

I have made several new recipes this Christmas, this being one of them. I’ve NEVER posted a comment before but several of my new adventures have just been disgusting but these were not one of them. These cookies were absolutely AMAZING and if you want a great macadamia nut cookies,this is your recipe. The only change I made was I used white chocolate chips.

It sounds like they were a bit over baked. I would try cooking them a minute or two less next time.

I tried this recipe at Christmas and sent to my daughter. She didn’t get them till a week later and she said they were Ahhh-mazing! I agree. I baked some less and some more so I could try the soft version and the crunchy version, both were good. But I think the softer ones keep longer.. if there is such a thing! Make sure you use the genuine White chocolate (ghiradelly is great) and good quality mac nuts! Thanks again!
