Red Velvet Coffee Cake

This light and fluffy Red Velvet Coffee Cake is moist and unbelievably scrumptious! The brown sugar topping adds an irresistible crunch! This is a must make!
Ingredients
Cake
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 eggs (beaten)
- 1 teaspoon vanilla extract
- 3 tablespoons cocoa powder
- 1/2 teaspoon salt
- 1 tablespoon vinegar
- 1/3 cup sour cream
- 1/2 cup milk
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 cup flour
- 1/2 cup mini chocolate chips
- 1 1/2 tablespoon red food coloring
Topping
- 1/2 cup brown sugar (loosely packed)
- 1 tablespoon cocoa powder
- 2 tablespoons oil
- 1/3 cup mini chocolate chips

Step 1 | |
In a large mixing bowl, cream the butter and sugar. Add the beaten eggs and mix very well. Mix in vanilla, cocoa, salt, and vinegar. Add baking soda, baking powder, and half of the flour mixing until well combined. Mix in the sour cream and milk. Mix in remaining flour just until combined. Add food coloring and mix until batter is evenly colored. Stir in chocolate chips. Pour into greased 8" square baking pan. Set aside. | |

In a small bowl stir together topping ingredients until the oil has coated everything. Sprinkle evenly over the cake batter. Bake at 350* for 30 minutes. |

You could certainly use buttermilk if you wanted to! The vinegar helps the red pop more and I feel like most people have it on hand vs buttermilk 🙂
