Pumpkin Oreo Mousse Brownies
Ingredients
Brownies
- 1 cup unsalted butter
- 1 cup semi sweet chocolate chips
- 1 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 4 eggs
- 1/2 tsp salt
- 1 1/4 cup all purpose flour
- 14 Oreo cookies roughly chopped
Pumpkin Oreo Mousse
- 8 oz softened cream cheese
- 1 1/2 cups powdered sugar
- 1/3 cup pumpkin puree
- 1/2 tsp pumpkin pie spice
- 8 0z Cool Whip
- 20 Oreos roughly chopped
Instructions
Brownies
- Preheat the oven to 350
- In a large glass bowl melt the butter and chocolate chips in the microwave for about 1 minute, stirring every 30 seconds until smooth and melted.
- Stir in cocoa powder and sugar.
- Mix in eggs, one at a time.
- Add salt and flour, stirring just until combined.
- Stir in Oreos and spread batter into a greased 9x13" pan.
- Bake for 20-24 minutes or unil toothpick inserted into the center comes out mostly clean or with fudgy crumbs. Do not over bake!
- Allow to cool completely.
Pumpkin Oreo Mousse
- In a large mixing bowl, beat together cream cheese and powdered sugar until smooth and creamy.
- Add pumpkin puree and pumpkin spice and mix will.
- Stir in Cool Whip and Oreos until incorporated and spread over cooled brownies.
- Chill for 2 hours before serving. Store leftovers covered in the refrigerator.
