Mint Chocolate Chip Cookies

- 1 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 egg
- 1 teaspoon baking soda
- 2 1/4 cups all purpose flour
- 1 cup chocolate chips
- 1 1/2 cup Andes Mint Baking Pieces
- 10oz melted chocolate (melting wafers, or chocolate chips)
- 3/4 cups Andes Mint Baking Pieces
|Preheat oven to 350 |
In a large mixing bowl, cream together butter and sugars.
|Add salt, vanilla, and egg and mix well.|
|Mix in vanilla and baking soda.|
|Add flour and mix on low until incorporated.|
|Stir in chips and mints.|
|Drop cookie dough by 2 TBS scoops on a silicone baking mat or parchment lined cookie sheet 2" apart. |
Bake 9-10 minutes or until lightly golden around the edges.
Allow to cool a few minutes on the cookie sheet before moving to a wire rack to cool completely.
|Once cookies are completely cool, dip one side of each cookie into the melted chocolate and sprinkle with mint pieces. |
Allow chocolate to set up before storing in an airtight container.
