It’s that time of year again, when many of you are eager for snow and Christmas, and peppermint everything, and the rest of you are clinging to fall leaves, thanksgiving feels, and pumpkin recipes galore!
If I’m being honest, I am definitely starting to feel the holiday spirit, and that is reflected in my baking these days!

Can I substitute margarine for butter in this cookie recipe? No. Margarine and butter are very different, and will not produce the same results. Always use real butter for the best texture and flavor in all baked goods.

Can these cookies be made in advance and frozen? Yes! These freeze beautifully and will keep for 3 months in a well sealed freezer bag.

PRO TIP: Before dipping the cookies in chocolate, place them in the freezer for an hour. This will help prevent any cookies from breaking and will keep crumbs out of the melted chocolate!

Ingredients
Cookies
- 1 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 egg
- 1 teaspoon baking soda
- 2 1/4 cups all purpose flour
- 1 cup chocolate chips
- 1 1/2 cup Andes Mint Baking Pieces
Topping
- 10oz melted chocolate (melting wafers, or chocolate chips)
- 3/4 cups Andes Mint Baking Pieces
Directions

Step 1 | |
Preheat oven to 350 In a large mixing bowl, cream together butter and sugars. | |

Add salt, vanilla, and egg and mix well. | |
Step 3 | |
Mix in vanilla and baking soda. | |
Step 4 | |
Add flour and mix on low until incorporated. | |
Step 5 | |
Stir in chips and mints. | |
Step 6 | |
Drop cookie dough by 2 TBS scoops on a silicone baking mat or parchment lined cookie sheet 2" apart. Bake 9-10 minutes or until lightly golden around the edges. Allow to cool a few minutes on the cookie sheet before moving to a wire rack to cool completely. | |

Once cookies are completely cool, dip one side of each cookie into the melted chocolate and sprinkle with mint pieces. Allow chocolate to set up before storing in an airtight container. |
