How to Make Lemon Curd

How to Make Lemon Curd
Prep time 15 minutes
This is an easy recipe for How to Make Lemon Curd! It's so simple to make and the taste just can't be beat! Smooth, bright, and full of pure lemon flavor!

Ingredients

  • 3/4 cups granulated sugar
  • 4 tablespoons unsalted butter (softened)
  • 2 eggs
  • 1/4 cups fresh lemon juice

Directions

Step 1
In a medium bowl cream the butter and sugar until light and creamy. Add eggs and lemon juice and mix well. Add to a saucepan and cook over low heat until it thickens and begins to simmer (about 10 min). Turn off heat and let cool. Store sealed in the refrigerator.

    I’ve only made lemon curd once in my life and that was a few years ago. Seeing yours makes me want to get busy and make it again. After all, nothing says springtime like fresh lemon curd.

    YES! I’m so with you! After Christmas, all I want to do is makes lemony goodies because it’s so grey and miserable and lemon is the only thing that helps. This curd looks like a great help during these awful winter days. 🙂
