Banana Cupcakes with Chocolate Oreo Frosting

Banana Cupcakes with Chocolate Oreo Frosting

Banana Cupcakes with Chocolate Oreo Frosting
Serves 18-20
Cook time 9 minutes
Banana Cupcakes with Chocolate Oreo Frosting - what could be better? Banana Cupcakes made from scratch topped with creamy chocolate frosting and Oreo crumbs!

Ingredients

Cake

  • 4 tablespoons unsalted butter (softened)
  • 2 tablespoons oil
  • 1 Large very ripe banana (mashed)
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 heaped tablespoons sour cream
  • 1/2 tablespoon baking powder
  • 1 1/4 cup all purpose flour

Frosting

  • 6 tablespoons unsalted butter (soft)
  • 1 1/2 cup powdered sugar
  • 1/2 cup cocoa powder
  • 2 -4 tablespoons milk
  • pinch salt

Topping

  • 1/4 cup Oreo cookie crumbs

Directions

Cupcakes
Step 1
Preheat oven to 350
In a mixing bowl beat together the butter, oil, banana, and sugar. Add the egg, vanilla and salt and mix well. Add the milk and sour cream until well bended. Carefully mix in the flour and baking powder just until combined.
Fill greased or lined mini muffin trays 3/4 full and bake 8-9 minutes or until tester comes out clean or with a few crumbs. Allow to cool 10 minutes before removing from the pans.
Frosting
Step 2
Beat butter until creamy. Mix together all frosting ingredients until smooth and creamy. Add more milk if it's too thick. Spread or pipe onto tops of the cupcakes. Immediately sprinkle with cookie crumbs.

    I love these! I actually made a banana cake for my daughter’s 3rd birthday this year since she loves bananas. I love how moist the cake turns out. And the texture is quite different from banana bread.
