5 Minute Mint Chocolate Fudge

5 Minute Mint Chocolate Fudge
Serves 48
Prep time 10 minutes
This 5 Minute Mint Chocolate Fudge is so easy, and perfect for Christmas time! It's smooth and creamy, rich and chocolatey, cool and minty - so delicious!!

Ingredients

  • 14oz sweetened condensed milk
  • 2 cups semi sweet chocolate chips
  • 1/2 teaspoons peppermint extract
  • 3 tablespoons unsalted butter (divided)
  • 1 1/2 cups chopped Andy's Mints (divided)

Topping

  • 1/4 cups green candy melts
  • 2 teaspoons oil
  • 3 drops peppermint extract

Directions

Step 1
In a glass bowl, add condensed milk, chocolate chips, 1/2 cup Andy's Mints, and 1 TBS butter. Heat in microwave in 30 second bursts, stirring between each burst, until smooth and melted. Stir in peppermint extract. Spread into a parchment paper lined 8x8" pan and set aside.
Step 2
In a small bowl, add remaining Andy's mints and remaining butter. Heat in microwave in 15 second bursts, stirring between each burst, until just starting to melt. Make sure the butter and mints are combined well, but don't completely melt down the mints. Carefully pour on top of the fudge and gently swirl. Cover and chill at least 3 hours or until firm.
Topping
Step 3
In a a glass bowl, heat green candy melts with oil in the microwave in 15 second bursts, stirring between each burst, until smooth and melted. Stir in peppermint and drizzle over fudge. Once set, store in a tightly sealed container.

    I just made it on Wednesday to share with some of my friends at work. My goodness it was a hit! I think I over-melted the top layer, but as a friend put it, it tasted like a rich peppermint patty. Now I’m sorry there’s none left, but that means I get to make more for myself!
