Triple Chocolate Cookies made with Coconut Oil

I never thought I could love a cookie made without butter…but it happened! These coconut oil cookies are rich and chewy and loaded to the max with chocolate! And I’m going to pretend they are semi healthy since they are made with coconut oil 😉

Ever since I made these awesome Fudgy Coconut Oil Brownies I’ve been meaning to make cookies using coconut oil too. The Brownies were undeniably scrumptious so I had high hopes for the cookies.

Coconut Oil Triple Chocolate Cookies

Oh my. These came out thick and chewy and perfectly chocolatey! I couldn’t resist them fresh from the oven all warm and melty. Mmmmmm

If you have a chocolate sweet tooth like me, and maybe you don’t eat butter or just want another option, please make these!! You’ll be glad you did!

    Coconut oil, FTW! I get mine from Trader Joe’s because it’s $4.99 as opposed to $15 everywhere else, for a 16oz jar.

    I loooove baking with olive oil, I use it almost as often as I do butter. Such a great flavor and texture. These cookies look perfect!
