How long will it take to make stiff peaks in the meringue? It takes about 5 minutes with a stand mixer for the sugar to dissolve and for stiff peaks to form.

What do stiff peaks look like? You will know you’ve reached the stiff peak stage when you lift the beaters and the meringue lifts and holds its shape in a peak. If you turn the beaters upside down, the meringue will not move.

How long do meringues last after baking? Meringue Cookies can last nearly 2 weeks as long as they are kept dry in an airtight container. Any moisture will make them sticky and they will lose their crisp shells.

Ingredients
- 2 egg whites (room temperature)
- 1 dash salt
- 1/2 teaspoon cream of tartar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- red and blue food coloring

Preheat oven to 225 | |

In a mixing bowl, beat the egg whites, salt, and cream of tartar until stiff peaks form. | |

While continuing to mix, add sugar slowly and beat until, thick and shiny, and stiff peaks are formed. | |

Mix in vanilla and divide merengue into 3 bowls. Leave one plain, add red food coloring to one bowl, and add blue food coloring to the last bowl. Add each color to a separate piping bag (or zip top baggie). Using a star tip, pipe star shapes (or any shape desired) onto parchment or silicone lined baking sheets. | |

Bake for 45 minutes, then turn off the oven and leave undisturbed for an hour. Remove from oven and let cool completely. Store in a loosely covered container. |
