Red Beans and Rice Soup

Red Beans and Rice Soup
Serves 4
Red Beans and Rice Soup is a delicious, easy, and inexpensive meal that's ready in 15 minutes! Full of flavor and easy to make spicy or mild as desired.

Ingredients

  • 1 Medium onion
  • 28oz crushed tomatoes
  • 2 cups cooked rice
  • 1 can red kidney beans (drained)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • red pepper flakes (to taste)
  • salt and pepper (to taste)

Directions

Step 1
In a medium sauce pan saute the onion until soft. Add all remaining ingredients and stir over medium heat until hot.

    Growing up in my Italian household if you can crushed tomatoes and some beans you could make soup, nonna added some pasta and greens and called it dinner.

    So funny – I think my husbands favorite thing to eat is baked beans over rice – I had never heard of that before meeting him. Its so simple and he literally wiggles in his seat with excitement whenever I remember to serve that, lol! I have a feeling your simple soup would be right up his ally!

    You’re so right – we can very often make a delicious meal from standard pantry ingredients if we just use a little imagination! I can’t think of anything more delicious and comforting than a bowl of this soup after a long, busy day.
