Red Beans and Rice Soup is a delicious, easy, and inexpensive meal that’s ready in 15 minutes!
Honestly, this meal came about from one of those nights when I totally forgot about making dinner. There was almost nothing in the fridge or pantry, and I was desperate for a trip to the grocery store. The leftover white rice from our Chinese take out the night before and the lone can of beans in my pantry inspired me to make something yummy from very few ingredients. It took me 15 minutes (maybe less) from start to finish, and the results were really delicious! This is simple comfort food anyone can make!
This is pretty much a really saucy version of red beans and rice. Nothing fancy or new here, but I decided to share it with you because sometimes we forget that something so simple can be a great meal! Especially on days and nights where you are pressed for time, or over due for a trip to the grocery store. This cost maybe $2 to make and serves 4 adults easily.
You can add lots of crushed red pepper to make it nice and spicy, or leave it out altogether if you are feeding little ones or you just don’t like heat. Sausage or shrimp would be really good in here too, if you happen to have some on hand!
