One of my twin’s favorite flavors is mint, and he is obsessed with these brownies!
Ever since I first made them when I was writing my cookbook, Brownies, Blondies, and Bars, he has been hooked. Any time I ask for suggestion on what to make for dessert, you can bet he will ask for these!

Ingredients
brownies
- 1 cup unsalted butter
- 1 cup semi sweet chocolate chips
- 3/4 cups cocoa powder
- 2 cups granulated sugar
- 1/2 teaspoon salt
- 4 eggs
- 1 1/4 cup all purpose flour
fudge
- 2 1/2 cups white chocolate chips
- 1 cup condensed milk
- 1 1/2 teaspoon mint extract
- 6 drops green food coloring (optional)
topping
- 1 cup Andes mints (chopped)
Directions

Step 1 | |
Preheat oven to 350 In a glass bowl add butter and chocolate chips and microwave for about 90 seconds, stirring every 30 seconds until melted and smooth. | |

Add cocoa and sugar and mix well. Stir in eggs one at a time. Stir in vanilla and salt. Add flour and stir until well combined. Set aside. | |

In a glass bowl, melt the condensed milk and white chocolate in the microwave, 30 seconds at a time, stirring each time, until melted and smooth. Stir in mint and food coloring. | |

Spread half of the brownie batter into a foil lined and greased 9x13" pan. Pour fudge evenly over brownie batter. Gently spread remaining brownie batter over fudge layer and sprinkle with mints. Bake about 35 minutes or until set and brownie starts to pull away from the edges. Let cool completely before cutting into bars. Store tightly covered. |
