This Low Carb Keto Cheesy Sausage and Veggie Sheet Pan Dinner is a 30 minute meal that the whole family will enjoy – whether you’re eating low carb or not! Skip the cheese for a dairy free option.
I am always on the lookout for quick and easy dinner recipes. We have six young children (including a new baby) so sheet pan dinners like this, and crock pot meals are my favorites right now!
All it takes is about five minutes of prep time and 25 minutes in the oven. Boom! Dinner is served!
I realize carrots are not the lowest carb veggie, but there are not very many in this recipe and the sweetness is a nice contrast to the salty kielbasa!
If you’d rather swap the carrots for another veggie, feel free! You can really make his with any veggies you like.
We all like cauliflower, and I know it is a favorite of a lot of you who eat low carb or follow a keto diet. Plus it’s super tasty in this recipe…especially covered in cheese!
Other veggies you can use in this Low Carb Keto Sausage and Veggie Sheet Pan Dinner:
- Broccoli
- Zucchini
- Bell Peppers
- Asparagus
- Mushrooms
Just be sure to keep the heartier veggies like broccoli and cauliflower in small pieces so everything cooks evenly.

Ingredients
- 1lb Kielbasa (Sliced)
- 4 cups small cauliflower florets
- 1 cup baby carrots (sliced in half lengthwise)
- 2 tablespoons olive oil
- sea salt (to taste)
- 3/4 teaspoons garlic powder
- 3/4 teaspoons dried thyme
- 1 1/2 cup shredded cheddar cheese
Directions

Preheat oven to 425* Add all ingredients (except the cheese) to a bowl, and toss to coat evenly with oil and seasonings. | |
Step 2 | |
Pour onto a greased sheet pan in a single layer. Cook for 25 minutes. Sprinkle with cheese and cook until melted (2 minutes or so). |

I made this meal tonight and it was fantastic. I added bell peppers, mushrooms, and onions.
How do I figure out the nutritional facts?

When you say mix all ingredients in the bowl, does that include the cheese? I see that you say sprinkle with cheese and bake 2 more minutes, but I’m not sure if I am suppose to put the cheese in the bowl with everything else?

We had this for dinner tonight and it was excellent! Next time I’ll probably cook it 20 minutes instead of 25 because we like our veggies a little crunchy.
