Espresso Maple Cookies

- 1 cup unsalted butter
- 1 1/2 cup brown sugar
- 1 egg
- 1 teaspoon maple extract
- 1/2 teaspoon salt
- 1 1/2 tablespoon Espresso Powder (mixed with 2 Tbs water)
- 1 teaspoon baking soda
- 2 1/4 cups all purpose flour
- 11oz maple baking chips
|Preheat oven to 350 |
In a mixing bowl, cream together the butter and sugar.
Mix in egg, maple extract,salt, and espresso.
Add baking soda and flour, mixing slowly until incorporated.
Stir in maple chips.
|Drop dough by 2 TBS scoops 2" apart on an uncreased cookie sheet. (I line mine with a silicone baking mat). |
Bake 8-9 minutes or until golden.
|Allow to cool on the cookie sheet a few minutes before transferring to a cooling rack to cool completely. |
Store in an airtight container at room temperature.
