Eggnog Texas Sheet Cake

Eggnog Texas Sheet Cake
Serves 32
Need an easy dessert to bring to a holiday gathering? This Eggnog Texas Sheet Cake feeds a crowd and is amazingly delicious! The Eggnog icing is incredible!

Ingredients

Cake

  • 3/4 cups unsalted butter
  • 1 1/2 cups eggnog
  • 1 1/2 cups granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking soda
  • 2 cups all purpose flour
  • dash nutmeg

Icing

  • 1/2 cups unsalted butter
  • 1/2 cups eggnog
  • dash nutmeg
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions

Step 1
Preheat oven to 350
In a large saucepan melt butter over medium heat. Stir in eggnog and turn off heat. Mix in sugar, vanilla, and eggs until well blended. Add in baking soda, nutmeg, and flour and carefully stir until smooth. Pour batter into a greased jelly roll pan (13x18").
Bake 14 minutes or until toothpick inserted into the cake comes out clean.

Step 2
Make the frosting while the cake bakes.
In a medium sauce pan melt the butter with the eggnog. Stir to combine and bring to a boil. Once it boils turn off the heat and stir in the powdered sugar, nutmeg, and vanilla until well incorporated. Pour evenly over cake as soon as it comes out of the oven.

    I was tired and needed to use leftover eggnog. I did not feel like baking at all. Made the recipe, in that spirit. It was a breeze to make. I didn’t feel like waiting to put the cake away. While it cooled I just slapped it on my stove and went to bed.
    When I woke up it smelled so DELICOUS in my house! The cake looks great and everyone loved it.

    Sheet cakes are totally the way to go! I’m not a fan of 1) decorating cakes and 2) stacking them! The eggnog flavor sounds great in this one.
