My grandma use to make us monster cookies all the time when I was a kid, so I always think of her when I make them myself now. Definitely comfort food!
They are a favorite with our kids, and I made them even easier to make by turning them into bars!
Plus this version, with pumpkin, makes a delicious, easy, fall dessert!
These bars contain both pumpkin and peanut butter…if you’ve never tried this flavor combo, you might be thinking it sounds strange.
Trust me, it’s amazing! I never liked pumpkin much before, until a few years ago when I made these Peanut Butter Pumpkin Pretzel Cookies, and then these BEST Pumpkin Chocolate Chip Cookies.
I’m telling you, these flavors are so so good together!
I went on a bit of a baking frenzy recently, and ended up sharing, giving away, or freezing most of what I made. These bars were one of the things I froze.
Now, I don’t know if it’s the name “Monster Cookie Bars” that makes these so appealing to kids, but my 3 year old can’t get enough. He asks almost everyday if he can take one out of the freezer to eat!
These do freeze really well. I just pull out whatever we are going to eat and either let it sit out at room temp for about 30 minutes, or microwave for about 20 seconds. So good!
These were a hit with everyone – even non pumpkin lovers! Enjoy!
Chewy Pumpkin Monster Cookie Bars
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 2/3 cups brown sugar
- 2/3 cups pumpkin puree
- 1 eggs
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon pumpkin spice
- 1 teaspoon baking soda
- 2 cups old fashioned oats
- 1/2 cup all purpose flour
- 1 1/2 cup semi sweet chocolate chips
- 1 cup M&M'S (I used the fall colored ones)

Preheat oven to 350 In a large mixing bowl, beat together the sugars, peanut butter, and pumpkin until well blended. Add egg, salt, and vanilla and pumpkin spice and mix well. Mix in soda, oats, and flour until combined. Stir in chips, and M&M's, reserving a small amount to sprinkle over the top of the bars. | |

Spread into a greased 9x13" pan, and sprinkle with remaining chips and M&M's. Bake 15-20 minutes or until tester comes out mostly clean (no raw batter). Allow to cool before cutting into bars. ** These freeze well, too! |
