This Cheesy Hash Brown Casserole is one of those recipes that you will make over and over again. It’s great any night of the week, and it’s especially wonderful as a holiday side dish. Everyone will go back for seconds of these!
Lately my husband has been a little obsessed with these potatoes. Every time I make them he says “You know, you can make these as often as you want. I won’t get sick of them”. It’s totally true, too. I made this recipe 3 times in 3 weeks and each time he was all excited about it! The kids love it too. One of my twins, who is 2, just nods his head saying “mmmmm” when he eats them 🙂 It’s safe to say this recipe is a crowd pleaser!

Cheesy Hash Brown Casserole

Ingredients
- 1 bag Ore Ida Frozen Hash Browns (30 oz)
- 2 cans cream of chicken soup
- 3/4 cups sour cream
- 3 cups shredded cheddar cheese (divided)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- salt and pepper (to taste)
Directions

Preheat oven to 400 In a large bowl stir together everything except 1 cup of the cheese. Spread evenly into a greased 9x13" pan. Sprinkle the top with remaining cheese. Cover pan with foil and bake for 25 minutes. Uncover and bake 20 minutes more. |

I made this with velveeta instead of cheddar cheese and i added shredded chicken, bacon, and green onions. Huge hit and a new family tradition!

I live in Canada and Ore Ida is one product I have not seen here – I was browsing through your recipes and came across this recipe – mm love cheese and potatoes – but I will have to look for this type of frozen shredded potatoes – so its on my list for my shopping this week – if I can not find them I will have to make the real thing and shred my only potatoes – which I have done in the past.. love your site and recipes

This may be a silly question, but do you thaw the frozen shredded hash brown potatoes? I ask because I’ve tried similar recipes, but my potatoes never seem to get “soft”. I don’t like my potatoes to still have a bit of “crunch” to them, if that makes any sense. I’ve tried similar recipes that use frozen, thawed and I’ve even tried cooking the potatoes prior to mixing with the other ingredients and baking the casserole! Are the potatoes just supposed to stay a tad bit firm? Your recipe is different from the others I’ve tried, so I’m going to give this one a go! Thank you!

Hi Pam! I do not thaw the potatoes first. They aren’t crunchy, but they’re not mushy either. I think you will be happy with the texture 🙂 All the creaminess from the cheese and soup help soften the potatoes. I hope you enjoy these as much as we do!
