Lately my husband has been a little obsessed with these potatoes. Every time I make them he says “You know, you can make these as often as you want. I won’t get sick of them”. It’s totally true, too. I made this recipe 3 times in 3 weeks and each time he was all excited about it! The kids love it too. One of my twins, who is 2, just nods his head saying “mmmmm” when he eats them πŸ™‚ It’s safe to say this recipe is a crowd pleaser!

Hash Browns

I went to Walmart the other day and picked up another bag of Ore Ida hash browns so I could make this casserole. Again πŸ˜‰ They are having in store demos at participating Walmart locations that will take place November 30th and December 1st, so go check it out! See the special Disney packaging? Disney’s Frozen sweepstakes is going on now and they are giving away tons of awesome prizes! Make sure you enter! There will also be a Twitter Party on 11/27 at 11am EST, check it out!

I accidentally forgot to get 2 cups of soup when shopping so I made this with only one cup of soup and it still came out great!

I live in Canada and Ore Ida is one product I have not seen here – I was browsing through your recipes and came across this recipe – mm love cheese and potatoes – but I will have to look for this type of frozen shredded potatoes – so its on my list for my shopping this week – if I can not find them I will have to make the real thing and shred my only potatoes – which I have done in the past.. love your site and recipes

This may be a silly question, but do you thaw the frozen shredded hash brown potatoes? I ask because I’ve tried similar recipes, but my potatoes never seem to get “soft”. I don’t like my potatoes to still have a bit of “crunch” to them, if that makes any sense. I’ve tried similar recipes that use frozen, thawed and I’ve even tried cooking the potatoes prior to mixing with the other ingredients and baking the casserole! Are the potatoes just supposed to stay a tad bit firm? Your recipe is different from the others I’ve tried, so I’m going to give this one a go! Thank you!

Hi Pam! I do not thaw the potatoes first. They aren’t crunchy, but they’re not mushy either. I think you will be happy with the texture πŸ™‚ All the creaminess from the cheese and soup help soften the potatoes. I hope you enjoy these as much as we do!
