I have been a bit absent around here this summer. Oh, I have still been cooking and baking up a storm, and even taking photos in hopes of sharing a lot of those recipes with all of you.
Honestly though? I knew I wouldn’t get around to posting most of them. At least not until school started back up again.
You see, I have the privilege of staying home with our six children, and I’m lucky enough to be my own boss and set my own hours. I knew before school even let out that this summer was for family. For spending time together, making memories, and enjoying every minute with them while they are still little and home with me.
Well, we had a wonderful summer! Lots of little trips, fun adventures, and even a trip to Disney World!
Now school is back in session, and another little one started kindergarten this year. Boy, it goes fast!! He is adjusting to being gone all day, and I am adjusting to only having my baby and 3 year old home during the school day.
It’s so quiet!
I am working on getting the baby on a better nap schedule so I can devote that time to work, and still focus my time and energy on them the rest of the time. So, when it’s quiet around here, just know that I haven’t gone away, I’m just enjoying my babies!
Now back to these amazing Butterfinger Rice Krispie Treats! You guys are going to LOVE them!!
This recipes uses a 9×13″ pan and makes about a 3/4″ thick rice krispie treat. If you like yours super thick, go ahead and use a 8 or 9″ square pan instead. I like them thinner because then you get more of the chocolate and butterfinger topping in each bite! But to each his own 😉

CAN I MAKE BUTTERFINGER RICE KRISPIE TREATS IN THE MICROWAVE? Yes! Melt the butter, peanut butter, and marshmallows in a glass bowl for about 3 minutes, stirring after each minute until completely melted. The rest of the directions are the same as listed below.

HOW DO I KEEP THE RICE KRISPIE TREATS FROM STICKING TO THE SPATULA WHEN PRESSING THEM INTO THE PAN? Simply spray the spatula (or your clean hands) with non stick cooking spray! No more sticky mess!

DO THE BUTTERFINGER RICE KRISPIE TREATS NEED TO BE REFRIGERATED? No. They can sit at room temperature in a tightly sealed container. If your kitchen is warm, you can refrigerate them to prevent the chocolate from melting.

Butterfinger Rice Krispie Treats

Ingredients
- 12oz marshmallows (or about 5 cups mini marshmallows)
- 3 tablespoons unsalted butter
- 1/2 cup creamy peanut butter
- 6 cups Rice Krispies cereal
- 4oz semi sweet chocolate chips (melted)
- 1/2 cup chopped Butterfingers
Directions
Step 1 | |
In a large sauce pan, melt butter and peanut butter over medium low heat. | |

Add marshmallows to melted butters and sir until completely melted. | |
Step 3 | |
Turn heat off and stir in cereal until combined. Press gently into greased 9x13" pan. | |
Step 4 | |
Drizzle treats with melted chocolate and immediately sprinkle with Butterfinger bits. Allow to cool, and cut into 20 squares. Tightly cover any leftovers. |
