As the weather warms up I start craving light, fresh, bright flavors! Oranges are one of my favorite fruits, I just love the vibrant citrus flavor these bars have. And the crust. Oh boy, is the crust ever delicious!
My 5 year old daughter LOVES lemon bars. She even asked for them for her birthday! These bars are just like lemon bars except with an orange filling. It’s basically pie in bar form, which means they are super easy to make! The flavors are awesome – so bright and fresh, and the buttery, slightly sweet crust is the perfect compliment. My girl now loves these just as much as the lemon bars! That’s really saying something
Orange Pie Bars
- powdered sugar (for sprinkling)
- zest of one orange
- 4 eggs
- 1 1/3 cup granulated sugar
- 1/2 cup fresh squeezed orange juice
- 4 tablespoons all purpose flour
- 1 heaped teaspoon baking powder
- 3/4 cups cold unsalted butter (cubed)
- 1/3 cup powdered sugar
- 1 1/3 cup all purpose flour
|Preheat oven to 350 |
In a medium bowl add butter, flour, and powdered sugar. Cut the butter into the flour and sugar until crumbly. Press the mixture into a greased 9x13" pan. Bake for 12 minutes.
|In a large bowl beat the eggs with orange juice and sugar. Add the flour and baking powder and mix well. Pour into baked crust and bake for 20 minutes or until edges just start to brown. Let cool to room temperature then chill in refrigerator.|
|Add the zest of an orange and a sprinkling of powdered sugar just before serving.|
