Zucchini Monster Cookies

Zucchini Monster Cookies

Zucchini Monster Cookies
Serves 60
Cook time 11 minutes
Zucchini Monster Cookies are a super delicious way to use up extra zucchini from the garden! You would never know these are made with zucchini and no butter!!

Ingredients

  • 1 cup grated zucchini (squeeze out excess liquid)
  • 1 cup brown sugar (packed)
  • 1 cup granulated sugar
  • 2 cups peanut butter (I used crunchy but you can use creamy if you prefer)
  • 3 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking soda
  • 4 cups old fashioned rolled oats
  • 1/2 cup all purpose flour
  • 2 cups semi sweet chocolate chips
  • 1 1/2 cup M&M's

Directions

Step 1
Preheat oven to 350
In a large mixing bowl, beat together the zucchini, sugars, and peanut butter until well blended. Add eggs, salt, and vanilla and mix well. Mix in soda, oats, and flour until combined. Stir in chips, and M&M's.
Step 2
Drop by heaping spoonfuls onto a silicone baking mat or parchment paper lined cookie sheet about 2" apart. Bake 9-11 minutes or until golden. Let set on cookie sheet about 5 minutes before transferring to a cooling rack. Once completely cooled, store in an air tight container.

    You are very brave letting the kids see that zucchini was going in. I would have to hide that from them and then maybe, just maybe, tell them after the fact! Great looking recipe!

    Those look delicious! I think I’d have to make a couple dozen batches of these cookies to make a dent in our zucchini haul this year…but it would be worth it for sure 🙂 Pinned!
