Southern Cornbread Salad

Cornbread Salad

Cornbread Salad
Serves 16-18
This Cornbread Salad is the perfect summer side dish for picnics, cookouts, and parties! With so many flavors and textures - it's sure to be a new favorite!

Ingredients

  • 1 8x8" pan of cornbread (cut into cubes)
  • 1 can pinto beans (14 oz)
  • 2 cups corn (can use frozen or canned)
  • 1 Small Vidalia onion (peeled and chopped)
  • 2 cups tomatoes (seeded and chopped)
  • 1/2 yellow pepper (seeded and chopped)
  • 1/2 green pepper (seeded and chopped)
  • 1 Medium zucchini (chopped)
  • 1/2 cup salsa
  • 1 1/2 cup ranch dressing
  • 2 cups shredded cheese

Directions

Step 1
Layer ingredients in even layers in the order listed into a 13x9" pan or a trifle dish. Cover and chill for several hours before serving. Keep leftovers refrigerated.

    Dumb question, but I just wanted to make sure we are talking about Pre-made (bottled) Ranch dressing. Or, do you make the packaged Ranch? Same with the Salsa? Fresh salsa or jarred? Sorry to ask dumb questions, but this looks and sounds so good, I don’t want to screw it up!! I’m so excited to make this and want to impress my friends!!! Thanks in advance!!

      Hi Chris! Not dumb questions at all 🙂 Yes, I used bottled ranch dressing and salsa. Fresh salsa would be just as good though! We love this salad, hope you enjoy it as well!

    I made something similar to this years ago and it was really delicious! Mine was one large trifle bowl but I love the individual servings you’ve done here much better. Definitely need to try making this again, it looks fantastic!

    This dish is completely new to me. It reminds me of a seven layer dip but even better because you use cornbread as the base. I’m definitely intrigued!
