Snickerdoodle Apple Pie Bars

Snickerdoodle Apple Pie Bars

Snickerdoodle Apple Pie Bars
Serves 24
Snickerdoodle Apple Pie Bars are easy to make, and will impress your friends! These are the perfect festive fall treat that will leave everyone raving!

Ingredients

Bars

  • 1 cup unsalted butter
  • 2 cups brown sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla
  • 2 2/3 cups all purpose flour

Filling

  • 4 cups chopped and cored Granny Smith apples
  • 2 teaspoons cinnamon
  • 1/4 cup brown sugar

Topping

  • 2 tablespoons granulated sugar
  • 2 teaspoons cinnamon

Glaze

  • 1 cup powdered sugar
  • 1-2 teaspoon water

Directions

Bars
Step 1
Preheat oven to 350
In a mixing bowl cream together the butter and sugar. Add the eggs, vanilla, and salt, and mix well. Add the baking powder and flour, a little at a time, and mix until incorporated. Spread half of the batter into a greased 9x13" pan. Set aside.
Filling
Step 2
Add apple, cinnamon, and sugar to a large skillet. Cook over medium heat, stirring occasionally, for about 5 minutes or until just starting to get tender. Pour evenly over bars. Top with remaining batter by dropping small spoonfuls all over the apples. Gently spread out batter as evenly as possible.
Topping
Step 3
Mix together sugar and cinnamon in a small bowl, and sprinkle evenly over bars. Bake for 30 minutes. Let cool completely.
Glaze
Step 4
Whisk together sugar and water and drizzle over bars. Store covered in the refrigerator. Best served warm!

    I made these for a Halloween party and guests loved them! I did do a few test batches prior to make sure they turned out well.
    The batter had just the right amount of sweetness; although it didn’t have the specific snickerdoodle flavor, the bars were very yummy!
    And while it was hard to spread the batter, I just used damp hands to flatten pieces of dough out, then carefully laid them in the pan/on top of apples.
    I also made a half batch with coconut oil for a guest with a dairy allergy. I did have to add a tiny bit of liquid to the mix. My friend really enjoyed them!
    I will stick with firm, tart apples; otherwise the middle layer becomes a sweet mushy mess, like applesauce.

    I just made these bars for a Thanksgiving dessert. They’re absolutely delicious! I did have to use more water than indicated for the icing drizzle though…2 teaspoons only caused the powdered sugar to glob up. I also found it tricky to work with the dough/batter as it’s so thick…just had to have some patience and all worked out.

    I made these Snickerdoodle Apple Pie Bars for a potluck at work. The only change I made was adding some cream of tartar to the batter. All snickerdoodle recipes I have ever made has this ingredient in it. It was a huge hit. I heard comments like, it’s sinful, better than an orgasm, awesome and winner food of the potluck. This recipe is a keeper!

      I wouldn’t recommend Red Delicious for baking as they will get mushy. A more crisp apple will work better!

    These are very tasty. I will definitely be making them again.

    I found the directions a bit tough to follow. It was hard spreading the bottom layer of the dough and there was no chance of spreading the dough on top of the Apple Mixture. I just grabbed bits of dough and squished them flat with my fingers and place them on top. It looked a little weird out of the oven but covering with stripes of icing made it look great.

    I wonder if I mis-made the dough (it was very tasty). Did others have trouble spreading the dough?

      I’m so glad you liked them! Yeah, the top layer is sticky so it’s tricky to spread. What you did is totally fine! I just drop little spoonfuls all over the top and gently spread. Whatever works! 😉 Thanks for the comment!

      I had trouble spreading the bottom layer with a utensil so I used my fingers to spread it out. It was like smashing it down then moving forward to make the batter cover the bottom of the pan. The top layer was challenging to me. I ended up taking small amounts of the batter and placing it on top of the apples. The apples were warm from cooking so as soon as the batter melted it was easier to spread out. I definitely needed more batter on the top than I did on the bottom so I will keep that in mind the next time I make them.
