I’m just going to go ahead and say it: This is the pumpkin recipe to beat this fall season! It is insanely delicious. Even if you don’t like pumpkin, I bet you will love this cake!

I just love coffee cake, don’t you? When you call a cake “coffee cake” it automatically becomes an acceptable breakfast. I like cake for breakfast 🙂

Butterscotch Pumpkin Coffee Cake with Peanut Butter Streusel

Also, I think I may have invented the best streusel topping EVER. Instead of using butter, I used peanut butter!! Peanut butter and pumpkin is such a good combination. If you have never tried it before, this is the recipe to try!

Easy Pumpkin Coffee Cake from Scratch

Between the moist, light pumpkin cake, studded with sweet butterscotch chips, and the crunchy peanut butter cinnamon streusel topping, this cake is seriously out of this world!
