Skinny Pumpkin Pie for One

A single serving of pumpkin pie with zero guilt!
- 1/2 cup pumpkin puree
- 2oz fat free cream cheese (or nufchatel, softened)
- 1/4 teaspoon cinnamon
- 1 pinch nutmeg
- 2 nectresse packets (or other zero calorie sweetner)
- 1 graham cracker sheet (crushed)
- 2 tablespoons whipped cream
|Crush the graham cracker and place in the bottom of a glass or small jar.|
|Using an electric mixer beat together cream cheese, pumpkin, cinnamon, nutmeg, and sweetner until creamy and smooth. Spoon on top of the crumbs. Chill for at least 2 hours to allow the flavors to develop. |
Top with whipped cream and a dash of cinnamon if desired before serving.
