Skinny Pumpkin Pie for One

A single serving of pumpkin pie with zero guilt!
Ingredients
- 1/2 cup pumpkin puree
- 2oz fat free cream cheese (or nufchatel, softened)
- 1/4 teaspoon cinnamon
- 1 pinch nutmeg
- 2 nectresse packets (or other zero calorie sweetner)
- 1 graham cracker sheet (crushed)
- 2 tablespoons whipped cream
Directions

Crush the graham cracker and place in the bottom of a glass or small jar. | |

Using an electric mixer beat together cream cheese, pumpkin, cinnamon, nutmeg, and sweetner until creamy and smooth. Spoon on top of the crumbs. Chill for at least 2 hours to allow the flavors to develop. Top with whipped cream and a dash of cinnamon if desired before serving. |

I’m all for guilt free dessert, especially since I know I’ll be stuffing myself with…. well,stuffing! This is a wonderful alternative to pumpkin pie. I’m not a fan of that pie, but I could see eating lots of this!

I love this idea (because I LOVE pumpkin pie!) I might just have to substitute the graham crust with an almond variety as those crackers are a tad bit elusive over here in Mexico!
