Peppermint Crunch Sugar Cookies

These Peppermint Crunch Sugar Cookies are perfectly chewy with a crisp edge. The addition of peppermint crunch chips makes these a perfect Christmas cookie!
Ingredients
- 1 cup unsalted butter (softened)
- 1 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 2 cups all purpose flour
- 1 cup peppermint crunch chips
Directions

Preheat oven to 350 In a large mixing bowl cream the butter and the sugar until light and fluffy. Add the vanilla, salt, and egg and mix well. Add the baking powder and flour and mix until well combined. Stir in peppermint chips. | |
Step 2 | |
Drop by spoonfuls onto a silicone baking mat or parchment paper lined cookie sheet 2" apart. Bake 6 minutes for mini cookies or 8 minutes for regular size. Let cool on cookie sheet a few minutes before transferring to wire rack to cool completely. Store in an airtight container. |

Andy’s sells peppermint crunch baking bits that can be found in the baking aisle. Almost like white chocolate bits with candy cane pieces inside. Hope you can find some!

I believe it’s spelled Andes. They were available all year last year on Amazon. Very pricey. Each year it’s difficult//frustrating to find them. The company has yet to realize its popularity and that they have a superior quality product.

I can find them at CVS. They’re the individual candies (like what Olive Garden gives w your bill) that come in a box; but you can chop them up like the candy bits Andes peppermint crunch thins.

Peppermint everything, please!! I love the idea of putting peppermint pieces in a cookie. Last year I put crushed up candycanes in a batch of chocolate chip cookies. It was good but it was definitely too hard for my teeth so I think that using those chips would be much better!

Add a little bit more flour. I made one batch with the exact recipe that was too runny. I added flour and baked a little bit longer and they turned out much better.
