Peppermint Crunch Sugar Cookies

These Peppermint Crunch Sugar Cookies are perfectly chewy with a crisp edge. The addition of peppermint crunch chips makes these a perfect Christmas cookie!

Chewy Peppermint Crunch Sugar Cookies Recipe

Does anyone else love making mini cookies? I just love making little bite sized cookies especially at Christmas time. Why? Because there’s always a plethora of goodies around, and when you make everything bite sized it is acceptable to try everything. Also, I’m pretty sure mini food is calorie free. Who’s with me?

 

Chewy Peppermint Crunch Sugar Cookies

Oh, you want 6 cookies, 4 truffles, and 2 pieces of fudge? It’s ok becasue they’re mini!! No one will judge 😉  Well, I won’t anyway.

So these cookies. They are fairly simple but that’s what makes them special. They are chewy, buttery sugar cookies. Simple and sweet! The magic happens when you add the peppermint crunch chips! The simple cookies are transformed into a must have christmas cookie!

    Can I refrigerate the dough overnight and bake the next day? Wanting to make these for a cookie party.

          Andy’s sells peppermint crunch baking bits that can be found in the baking aisle. Almost like white chocolate bits with candy cane pieces inside. Hope you can find some!

            I believe it’s spelled Andes. They were available all year last year on Amazon. Very pricey. Each year it’s difficult//frustrating to find them. The company has yet to realize its popularity and that they have a superior quality product.

          I can find them at CVS. They’re the individual candies (like what Olive Garden gives w your bill) that come in a box; but you can chop them up like the candy bits Andes peppermint crunch thins.

    I love making mini cookies until the third pan and then I tell my husband I’m tired and that he needs to make the rest. 😉 These look worth the effort, though! Perfect for Christmas. 🙂

    Peppermint everything, please!! I love the idea of putting peppermint pieces in a cookie. Last year I put crushed up candycanes in a batch of chocolate chip cookies. It was good but it was definitely too hard for my teeth so I think that using those chips would be much better!

    Add a little bit more flour. I made one batch with the exact recipe that was too runny. I added flour and baked a little bit longer and they turned out much better.
