I love a good cookie bar recipe (obviously), and trust me, this is one you need in your arsenal! They are so easy to make and are outrageously delicious. If you love peanut butter – you need these in your life asap!

I have been baking up storm lately. Something about the frigid temps. grey, gloomy skies, and getting snowed in with my kiddos just makes me want to bake all the things.

It’s only January and we have a few more months of this kind of weather…I may need an intervention.

Although, no one is complaining about the unending stream of baked goods coming out of the oven, so this trend just may continue 🙂

Peanut butter and chocolate is hands down my favorite flavor combo, so these are a no brainer for me. The texture of these bars is the best. Almost like a chewy, fudgy brownie. I can’t resist!

These lasted all of about 12 seconds in my house, so if you’re looking for an easy peanut buttery dessert – this is a sure winner!!

(Btw, I am writing this whole post with one hand, while my baby sleeps on my chest (the best!), and I sip my coffee while day dreaming about what to bake next! Just thought you might like to know 😉 Any suggestions?)

Peanut Butter Butterfinger Bars

Peanut Butter Butterfinger Bars are a rich and chewy, easy dessert recipe! Fudgy, brownie like bars topped with crunchy Butterfinger bits and chocolate chips!

Ingredients

  • 4 tablespoons unsalted butter
  • 1/2 cup creamy peanut butter
  • 1 cup peanut butter chips
  • 1 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1 3/4 cup all purpose flour
  • 10oz Butterfinger baking bits (or chopped Butterfingers)

Directions

Step 1
Preheat oven to 350
Place butter, peanut butter, and chips in a glass bowl and heat in the microwave in 30 second bursts, stirring each time, until melted.
Step 2
Stir in sugar, vanilla, and salt.
Add eggs and mix until well combined.
Add baking soda and flour, stirring gently until incorporated.
Step 3
Spread batter into a greased 13x9" pan and sprinkle evenly with Butterfinger bits. Press gently to help them stick.
Step 4
Bake for 15 minutes or until edges are golden and start to pull away from the sides of the pan. Do not over bake!
Let cool before cutting into bars.
