No Bake Mint Chip Sandwich Cookies

These No Bake Mint Chip Sandwich Cookies are so incredibly delicious, you would never guess how easy they are to make! Great idea for a St Patty's Day treat!
Ingredients
- 6oz cream cheese (softened)
- 4 tablespoons unsalted butter (softened)
- 1 1/2 cup powdered sugar
- 1/2 teaspoon peppermint extract
- 3 drops green food coloring (optional)
- 3/4 cups mini chocolate chips
- 70 vanilla wafers
- 1 1/2 cup semi sweet chocolate chips
- sprinkles
Directions
Step 1 | |
In a mixing bowl beat together the cream cheese and butter until smooth and light. Add sugar, mint, and food coloring and mix well. stir in mini chips. | |
Step 2 | |
Scoop a heaping teaspoon of mint filling onto half of the vanilla wafers. Gently top with remaining wafers and freeze for at least 30 minutes or until filling is very firm. | |
Step 3 | |
Melt chocolate in a glass bowl in the microwave in 30 second bursts, stirring each time until melted and smooth. Dip half of each cookie sandwich and immediately add sprinkles. Keep covered and refrigerated. |
