Iced Coffee Cookies and Cream Icebox Cake

This Iced Coffee Cookies and Cream Icebox Cake is the ultimate no bake dessert! Oreos, butterscotch, chocolate, and iced coffee - altogether irresistible!
Ingredients
- 32 Oreos
- 1/2 cup iced coffee (for dipping the cookies into)
Butterscotch Layer
- 4oz cream cheese (softened)
- 1/4 cup iced coffee (I used Green Mountain Brew Over Ice French Vanilla)
- 1 cup milk
- 1 packet butterscotch pudding mix (3.4 oz)
Chocolate Layer
- 4oz cream cheese (softened)
- 1/4 cup iced coffee (I used Green Mountain Brew Over Ice French Vanilla)
- 1 cup milk
- 1 packet chocolate pudding mix (3.4 OZ)
Topping
- 8oz whipped cream
Directions
Butterscotch Layer | |
Step 1 | |
In a mixing bowl beat cream cheese until smooth and fluffy. Add in coffee, milk, and butterscotch pudding mix packet and beat about 2 minutes until thick and well combined. Spread into an 8x8" baking dish. | |
Step 2 | |
Dip 16 Oreos into the iced coffee, one at a time, and arrange them in a single layer over the pudding. | |
Chocolate Layer | |
Step 3 | |
In a mixing bowl beat cream cheese until smooth and fluffy. Add in coffee, milk, and chocolate pudding mix packet and beat about 2 minutes until thick and well combined. Spread over the oreo layer. | |
Step 4 | |
Dip 16 Oreos into the iced coffee, one at a time, and arrange them in a single layer over the pudding. | |
Step 5 | |
Spread whipped cream over the top and chill for at least an hour. Store leftovers covered in the refrigerator. |
