Iced Coffee Cookies and Cream Icebox Cake

Iced Coffee Cookies and Cream Icebox Cake
Serves 12
Prep time 30 minutes
This Iced Coffee Cookies and Cream Icebox Cake is the ultimate no bake dessert! Oreos, butterscotch, chocolate, and iced coffee - altogether irresistible!

Ingredients

  • 32 Oreos
  • 1/2 cup iced coffee (for dipping the cookies into)

Butterscotch Layer

  • 4oz cream cheese (softened)
  • 1/4 cup iced coffee (I used Green Mountain Brew Over Ice French Vanilla)
  • 1 cup milk
  • 1 packet butterscotch pudding mix (3.4 oz)

Chocolate Layer

  • 4oz cream cheese (softened)
  • 1/4 cup iced coffee (I used Green Mountain Brew Over Ice French Vanilla)
  • 1 cup milk
  • 1 packet chocolate pudding mix (3.4 OZ)

Topping

  • 8oz whipped cream

Directions

Butterscotch Layer
Step 1
In a mixing bowl beat cream cheese until smooth and fluffy. Add in coffee, milk, and butterscotch pudding mix packet and beat about 2 minutes until thick and well combined. Spread into an 8x8" baking dish.
Step 2
Dip 16 Oreos into the iced coffee, one at a time, and arrange them in a single layer over the pudding.
Chocolate Layer
Step 3
In a mixing bowl beat cream cheese until smooth and fluffy. Add in coffee, milk, and chocolate pudding mix packet and beat about 2 minutes until thick and well combined. Spread over the oreo layer.
Step 4
Dip 16 Oreos into the iced coffee, one at a time, and arrange them in a single layer over the pudding.
Step 5
Spread whipped cream over the top and chill for at least an hour. Store leftovers covered in the refrigerator.

    Aren’t icebox cakes the best thing EVER?! I just discovered icebox cakes and I’m wondering how I and why I never tried these before. I am sooo hooked. I love your icebox cake. I would probably make this daily. Eat it daily. Expand my hips by the minute.
