This Iced Coffee Butterscotch Icebox Cake is the ultimate no bake dessert! Oreos, butterscotch, chocolate, and iced coffee – oh my, it is altogether irresistible!

This icebox cake is no joke. We devoured it in no time flat! Before it was even gone everyone was asking me to make it again, haha!  Good thing it’s easy to throw together because I’m pretty sure I will be making it quite often – especially this summer when it’s too hot to turn on the oven!

It may not be the prettiest thing…sorry about that, but boy is it ever delicious! It looked really nice in my clear glass dish. You could see all the glorious layers of butterscotch cheesecake pudding, coffee soaked oreos, chocolate pudding, more coffee soaked oreos, and whipped cream and sprinkles! But forget trying to spoon out perfect, beautiful servings. It’s not gonna happen. It’s ok though, because it will be eaten so fast no one will ever notice.

**By the way, the Oreos do not get soggy! They do soften a bit but that just makes this easier to eat. Trust me, it’s scrumptious!!**

 

This Iced Coffee Butterscotch Icebox Cake is the ultimate no bake dessert! Oreos, butterscotch, chocolate, and iced coffee - oh my, it is altogether irresistible!

Have you tried the Brew Over Ice K-Cups yet? I love them, especially in the summer. No more brewing coffee ahead of time so it can chill in the fridge for hours before you can enjoy it. Just fill a plastic tumbler with ice and brew either the 6 or 8 oz size for maximum flavor. I like hazelnut and french vanilla, but there are many varieties to choose from including a selection of teas! Check out Walmart (where I get mine) and look for the K-Cups with the blue Brew Over Ice seal on them.

Did you know that Keurig has it’s own recycling program for use with K-Cups? The Grounds to Grow program offers a way for K-Cup users to return used cups for processing that separates grounds for compost and plastics for re-use. Pretty cool, huh?

Anyway, baking with coffee is so wonderful, especially when you’re baking with chocolate. It makes it tastes even more chocolatey!! And now I have discovered that “no – baking” with iced coffee is just as awesome! The coffee flavor is not overpowering, rather it heightens the butterscotch and chocolate flavors in this icebox cake. You will without a doubt be back for seconds of this one! My husband doesn’t even like coffee but he thought this was amazing. I could have eaten the whole pan – I didn’t, but I could have 😉

    Aren’t icebox cakes the best thing EVER?! I just discovered icebox cakes and I’m wondering how I and why I never tried these before. I am sooo hooked. I love your icebox cake. I would probably make this daily. Eat it daily. Expand my hips by the minute.
