Light and Fluffy Chocolate Chip Muffins

Light and Fluffy Chocolate Chip Muffins

Light and Fluffy Chocolate Chip Muffins
Serves 12
Prep time 20 minutes
Cook time 15 minutes
Total time 35 minutes
Light and Fluffy Chocolate Chip Muffins are perfect for breakfast, brunch, or a snack. These are the best muffins, and they're sure to become a favorite!

Ingredients

  • 1/4 cup unsalted butter, melted
  • 1/4 cup canola oil
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/2 cup plain Greek yogurt
  • 3 tablespoons milk
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 cup semi sweet chocolate chips

Directions

Step 1
Preheat oven to 350 and grease a 12 cavity muffin tin.
Step 2
In a mixing bowl stir together butter, oil, sugars, eggs, yogurt, milk, and vanilla. Set aside.
Step 3
In a separate bowl, whisk together flour and baking powder. Add to wet ingredients and stir until just combined. Stir in chocolate chips.
Spoon into muffin tin, filling 12 cavities about 3/4 full.
Bake 13-15 minutes or until tester inserted into center muffin comes out clean. Let cool 10 minutes in the pan before cooling completely on wire racks.
Store in a covered container.

    These are absolutely delicious, although I thought the yogurt taste was very strong. Also, my muffins took longer than 13-15 minutes to cook. Loved them overall though!

    I will definitely try this recipe again but, itโ€™s missing salt! I think it needs probably a 1/2 tsp. of salt to make them have a better flavor. Nice light fluffy texture otherwise.

    I haven’t seen those Folder’s iced coffee drinks at my grocery store yet, but I’ve put them on my shopping list to look for next time I’m there. I really enjoy a good iced coffee, but they’re so expensive at the coffee shops! I’d much rather make mine at home and save that money for something else.

    I gave up starbucks for Lent and it has helped my wallet! It is easier to make muffins and coffee at home. I try making going out a special treat for this mommy with four kids at home as well!

    So here’s the thing…I have never been one to stop at a coffee shop for a snack and coffee. I would occasionally get just a coffee, but it’s been years even since I last did that. I cannot justify spending that kind of money. So, these sound perfect for me (because I am a daily coffee drinker). And the muffin sounds like the perfect accompaniment.

    It is so much easier to make coffee at home, rather than go to a coffee shop! Plus, now that I know how to make it at home, I often like my coffee better than the coffee at a coffee shop. These muffins are perfect for eating while drinking a cup of coffee.

    Talk about light and fluffy! Those have to be the fluffiest muffins I’ve ever seen. And really, you can’t beat the chocolate chips! I also love that you used greek yogurt, I bet it gives them lots of moisture and also ups the nutrition too!
