Lemon Cupcakes with Lemon Frosting

Ingredients
Cake
- 1/2 cup butter (softened)
- 1/3 cup canola oil
- 2 cups sugar
- 1/2 cup lemon luice
- 1/2 cup plain Greek yogurt
- 2 eggs
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 2 tablespoons corn starch
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 2 1/4 cups flour
Frosting
- 1/2 cup butter (softened)
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 3-4 tablespoons lemon luice

Step 1 | |
Preheat oven to 350 In a large mixing bowl cream together butter, oil, and sugar. Then add remaining cake ingredients and beat on low until combined, then beat on medium for 1 minute. Pour into prepared cupcake tins and bake 14 minutes or until done. Remove from tins and let cool completely before frosting. | |

Step 2 | |
In a bowl beat together the butter, sugar, vanilla, and 2 TBS of lemon juice. If needed add more lemon juice and beat until light and fluffy. Spread or pipe onto cooled cupcakes. Add sprinkles if desired. |
