I love a good cupcake just as much as the next guy, but lately I’ve been craving lemon instead of my usual favorite, chocolate.  Before last week , I don’t think I’d ever made a lemon cake! That needed to change. I had something extra special in mind for these little cupcakes too 🙂  I had an appointment for an ultrasound, where we would find out the sex of our baby, and my husband was not able to get the day off work. So I decided we needed to find a fun way of sharing the news with him when he got home that night.

I took one cupcake and filled it with frosting in the color that would let him know if he was having a boy or a girl. We gave it to him that night and as he was eating it I played him the video I took of me telling our 4 year old daughter our happy news. It was fun! These cupcakes are such a fun treat. They are moist and fluffy, and the lemon flavor is undeniable. The frosting is smooth and creamy and gives you an extra kick of lemon! So yummy!! Oh.     I have made lemon cupcakes and they are almost always dry, or they taste like corn muffins. Are these moist? Thank you linda

    Now I’m craving something lemony! I don’t use it a whole lot since my husband isn’t a lemon fan. I might have to make me and the kids a little treat this week.

    How incredibly sweet! Love the recipe, your photos, and your fun reveal!

    To tell our parents (both sides) we were pregnant with their first grandchild, we invited them to dinner. For dessert, we set a cake in the middle of the table that said, “Happy Grandparents Day!” It was one of the best moments EVER in my life, watching as the message registered with them one by one. That was 20 years ago… thanks for triggering a great memory for me.
