This Lemon Blueberry Bread is an easy breakfast that everyone loves, and it freezes well too!
Quick sweet breads like this are one of my favorite breakfasts. I like to make them the day before and then in the morning there is a delicious homemade breakfast that the whole family enjoys, and all I have to do is slice it! Sometimes I will double the recipe and put one loaf in the freezer for an easy breakfast another day.
We bought a huge container of blueberries and after two days of binge eating them, we were ready to enjoy them in a new way. The combination of lemon and blueberry is one of my favorites! This bread has such bright, fresh flavor, and the texture is moist and dense. The lemony glaze drizzled on top really pumps up the lemon flavor and adds just enough sweetness that it feels quite decadent. My kids were so excited to be eating “dessert” for breakfast, haha!
With or without the glaze, this bread is a treat! You can use fresh or frozen berries, just remember to keep them frozen if you go that route. No thawing first or you will end up with purple bread 🙂

Made this today for my book group. Subbed light sour cream for the yogurt and olive oil for canola. Delish! Lots of raves from my guests–and from my husband, who ate the leftovers!

i noticed in the photo that your blueberries sank to the bottom. You can prevent this by mixing the berries with a tablespoon of flour. This works for any addition to quick breads or muffins — fruit, chocolate chips, nuts. This helps the fruit, etc. to evenly distribute in your bread.

Hi Jamie! You can use regular plain yogurt or sour cream or buttermilk! Hope you love it!

I found this on pint rest and actually made this today! It was Delicious! !! The only issue I came across was that my glaze wasn’t forming so I added more lemon juice and a bit water. It was think and had to spread on top with a butter knife So I didn’t get the gooey effect. Does anyone know what I did wrong ? !

Sounds like you just didn’t add quite enough liquid. You can make it however thin or thick you like by adjusting the amount of liquid added. I hope you enjoyed the bread!

Absolutely! Just be sure to keep them frozen right up until you add them to the batter. Enjoy!

Try covering with foil and continue baking until a tester comes out clean. Everyone’s ovens are a little different, but the foil should help!

Whoa, mama! This looks amazing! That drizzle! Wow! Another trick to try is to coat your frozen blueberries in flour so they don’t sink to the bottom of the bread as it bakes.
