Glazed Cinnamon Pumpkin Spice Mini Muffins

Glazed Cinnamon Pumpkin Spice Mini Muffins

Glazed Cinnamon Pumpkin Spice Mini Muffins
Prep time 10 minutes
Cook time 8 minutes
Total time 18 minutes
These Glazed Cinnamon Pumpkin Spice Mini Muffins are fluffy, moist, and full of fall flavor! The sweet pumpkin spice glaze makes these little muffins irresistible!

Ingredients

Muffins

  • 3/4 cups pumpkin puree
  • 1 egg
  • 1/4 cup milk
  • 1/3 cup pumpkin spice creamer
  • 1 teaspoon cinnamon
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 1/2 cup flour
  • 2 teaspoons baking powder

Glaze

  • 3/4 cups powdered sugar
  • 1 tablespoon pumpkin spice creamer (add a little more if necessary)

Note

Recipe makes 18 mini muffins.

Directions

Muffins
Step 1
Preheat oven to 375
In a large mixing bowl, beat all muffin ingredients except flour and baking powder until smooth. Add the flour and baking powder and mix gently just until combined. Spoon into greased mini muffin tins 3/4 full and bake 8 minutes or until toothpick inserted into the center of a muffin comes out clean. Do not over bake.
Let cool. Remove from tins and add glaze.
Glaze
Step 2
Mix powdered sugar and creamer, Dip muffin tops into glaze.

    With Pumpkin Spice creamer being out of season for now, can you simply add pumpkin pie spice and more milk to get the same flavor?
