Before we get any further I need to just take a second to rave about these muffins. They taste like a glazed cake donut with lots of cinnamon and pumpkin spice flavors, making them perfect for fall. The most surprising part? They are LOW FAT! No butter or oil in these muffins and I promise you can’t even tell!
The pumpkin puree combined with skim milk and Coffee Mate Pumpkin Spice Creamer provide a wonderful moist and fluffy texture, making butter and oil completely unnecessary in this recipe.
Most mornings I start the day with a cup of coffee while making breakfast for my family. On this particular morning I was drinking my coffee with this delightful pumpkin spice creamer, while baking these mini muffins for my little ones. All I kept hearing the whole time was “It smells SO good! Are they ready yet??”. Luckily these come together in just a few minutes and take less than 10 minutes to bake.
This recipe makes 18 mini muffins. My kids are 4, 2, and 2. There were only a couple muffins left after they ate and that’s only because I told them it was time to stop eating, haha! I love relaxing mornings when we have nowhere to be for awhile and we can just sit and enjoy a yummy meal while talking about goofy things together. Lots of good memories are made around the table, and I love those sweet moment of connection with my family.

With Pumpkin Spice creamer being out of season for now, can you simply add pumpkin pie spice and more milk to get the same flavor?
