Gingerbread Bars with Eggnog Frosting

Gingerbread Bars with Eggnog Frosting

Soft and Chewy Gingerbread Bars with Eggnog Frosting are an easy Christmas dessert that everyone will love! The warm, festive flavors bring comfort and joy!

Ingredients

  • sprinkles

Bars

  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 cup molasses
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 teaspoons ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 2 3/4 cups all purpose flour
  • 2 tablespoons granulated sugar

Frosting

  • 5 tablespoons unsalted butter (softened)
  • 5 tablespoons cream cheese (softened)
  • 2 cups powdered sugar
  • 1-2 tablespoon eggnog

Directions

Bars
Step 1
Preheat oven to 350
In a mixing bowl, cream together the butter and sugar. Add molasses, eggs, vanilla, salt, and spices and mix well. Add baking soda and flour and mix until combined. Spread into a foil lined, greased 9x13" pan. Sprinkle with granulated sugar.
Bake 15-17 minutes. Do NOT over bake or they will dry out. You want them soft and chewy!
Step 2
In a mixing bowl beat butter, cream cheese, powdered sugar, and eggnog until light and fluffy. If too thick add more eggnog. Spread on completely cooled bars and add sprinkles, if desired. Cut into 24 bars and store tightly covered in the refrigerator.

    Plan on making for neighborhood party, did you use dark brown sugar and dark molasses or light?

      I used regular molasses and light brown sugar, however, you can use dark and it will have a deeper flavor. Enjoy!
