Flourless Chocolate Cookies
Ingredients
- 4 egg whites
- 3 cups powdered sugar
- 2/3 cup unsweetened cocoa powder
- 1/4 tsp salt
- 2 tsp vanilla
- 1/2 cup mini semi sweet chocolate chips
Instructions
- Preheat oven to 350*
- In a medium sized bowl, beat the egg whites until very frothy. Set aside.
- In a large bowl, whisk together powdered sugar, cocoa powder, and salt.
- Add vanilla and egg whites and mix until well combined.
- Stir in chocolate chips.
- On a parchment or silicone mat lined cookie sheet, use a 1/2" (2tsp) cookie scoop to drop dough balls 2" apart.
- Bake for 8 minutes.
- Allow cookies to cool for a few minutes before transferring to a cooling rack to cool completely.
- Store in an airtight container.
