Easy Pink Lemonade Fudge

Ingredients
- 3 cups white chocolate chips
- 1 can sweetened condensed milk (14oz)
- 1 packet dry pink lemonade kool-aid
- 1/2 teaspoon raspberry extract
- 1/4 cup white chocolate chips
- sprinkles (if desired)
Directions
Step 1 | |
In a large glass bowl, melt the white chips with the condensed milk. Heat for 30 seconds at a time until melted and smooth, stirring between each burst. | |

Stir in the kool-aid powder until completely dissolved. Stir in the raspberry extract. Pour into a parchment lined 8x8" pan and smooth the top. Chill at least 2 hours. | |
Step 3 | |
Remove fudge from the paper and cut into squares. Melt the white chocolate in a small glass bowl in the microwave, stirring every 20 seconds until smooth. Pour into a plastic baggie and snip off the very end. Carefully squeeze the bag to drizzle chocolate over the fudge. If adding sprinkles, only drizzle 5 pieces at a time so you can sprinkle before the chocolate sets. Store in a sealed container. Freezes well! |

Just curious…Do I use all 3 cups in the fudge and melt extra corn the drizzle? Or should I reserve some from the 3 cups the recipe calls for?

It totally depends on how big/small you want the pieces to be. I make mine fairly small and get about 50 pieces. Enjoy!!

I feel the same way about Valentine’s day. I’m not against it but it’s not for me either. I usually end up getting flowers, though, although I tell my man it’s not a big deal (I’m not complaining at all, though!! 😉 ) This lemonade fudge looks adorable! Cute AND tasty – ding ding ding Jackpot 😉

Hi Amanda, I was just wondering if you can use jelly crystals in place of the kool-aid as I have never seen kool-aid in Australia and assume the lemonade fudge needs some kind of setting agent?

Kool-Aid is available at the South Melbourne market if you are in Melb . . . and on-line as well. My daughter uses it to dye her hair!!!!!! : (
